Pickled Beetroots
You will need:
- beetroots- 3
- Sugar- ? cup
- Vinegar- 1 cup
- Cloves- 1 tsp (whole)
- All spice powder-1 tsp(store-brought/ homemade)
- Salt- ? tsp
Method
- Place the beetroots in a pan and add water till fully covered.
- Let it simmer. Once the beets are tender, remove from water.
- Once cooled, peel & slice them thinly.
- Place them in a glass jar.
- In another saucepan, add salt, sugar, vinegar, cloves and all spice & bring to a boil (5mins)
- Pour over the beets.
Refrigerate for an hour before serving.
Pickled Vegetable Slaw
These make amazing toppings for sandwiches.
You will need:
- carrots- 1 cup(julienned)
- Cucumber- 1 medium sized, sliced thinly
- Onion ? 1 ,thinly sliced
- White vinegar-2 cups
- Sugar-1/4 cup
- Salt- 2 tbsp
Method
- Place the vegetable slices into a glass jar.
- In a saucepan, add vinegar, sugar and salt and simmer.
- Once all the sugar and salt melt, pour the mixture over the veggies.
Marinate the pickle overnight& top these on your sandwiches and burgers!
Cauliflower Popcorn
This is a good way to infuse vegetables into the diet if your child is a fussy eater. This is not a pickle
You will need:
- Cauliflower florets-2 cups
- Olive oil
- Yeast-1tbsp
- Salt
- cayenne pepper/cumin/garlic powder for taste
Method
- Combine all the ingredients and mix well.
- Preheat oven to 450 degrees.
- Line a baking sheet with parchment paper
- Place the cauliflower along with the seasonings on the sheet.
- Cover with foil and bake for 15 minutes.
- Remove foil and again place the sheet in the oven & bake till the floret turns golden.
Remove from the oven, adjust seasonings and enjoy!
